My boys have the BEST Dad. Seriously. He's sweet and sensitive with them, but is also teaching them how to build things, how to play baseball and how to be a good husband and father. We didn't plan much for Father's Day since we were just getting back from Hilton Head, but we set out on an early morning fishing trip with Tom's parents. To say the boys loved it would be an understatement. Tom and his Dad have taken the boys before, but this was the first time I'd tagged along. They were so proud of the little fish they caught :)
AND, I'm back with the Menu Monday posts...for now, at least ;) Summertime means a less hectic schedule for us. We're getting a break from baseball practices and tournaments, so I'm hoping to keep up with posting our weekly menu here at least throughout the summer :) Here's what we're trying this week:
- Shrimp and Sausage Skewers - a family favorite! We use turkey kielbasa and shrimp and the boys both love it as much as we do. I'll make some asparagus to go with the skewers.
- Crock Pot Fajitas & Spanish Rice - hoping this one is as good as it sounds!
- Creamy Tomato Pasta & Salad - this will be our indulgent meal this week! I had a similar pasta in NYC's Little Italy once and I keep hoping to find a recipe that comes close...haven't had luck so far, but this from scratch recipe looks promising!
That's it for this Monday morning...we are busy busy today running errands and playing catch-up after a week away. Happy Monday, friends!! :)

That looks just like the pier in St. Petersburg... no? I was there on vacation just last week!

I made the crockpot fajita's. They were ok, I cooked it for 8 hours but there was a good flavor to it.
